Chef Neil Manacle joined Fluke Wine, Bar & Kitchen in Summer 2009. A graduate of Johnson & Wales University in Providence, R.I., Neil returned to his native New York, working at some of the city’s finest restaurants, including Chef de Cuisine at Bolo, Mesa Grill and Bar Americain and Executive Chef at Apiary. Enamored with the cuisines of the Mediterranean, Neil is passionate about fresh, seasonal and local ingredients wherever possible. The menu at Fluke changes daily, highlighting the best that the season has to offer.

Sous chef Kevin King also joined Fluke Wine, Bar & Kitchen in Summer 2009. Kevin’s prior experience allowed him to hone valuable skills and experience with a variety of cuisines at restaurants including Ilo, Koi, L’Impero and Apiary. Having worked together with Neil Manacle at Apiary in New York City, the two make a formidable pair in the kitchen.

Jerri Banks, friend and consultant to the Callaghans, created the Fluke Wine, Bar & Kitchen signature cocktail list. Her innovative use of fresh herbs and exotic flavorings are featured in libations both with and without alcohol. Ms. Banks’ background ranges from top New York restaurants to consultant for brands such as Bacardi and Moét Hennessy. She has been featured in numerous publications such as ‘O’ magazine, The New York Times and Modern Bride.

Proprietors Jeff Callaghan and Geremie Callaghan, both Aquidneck Island, R.I. natives, share their passion for food, wine and hospitality to all who visit Fluke Wine, Bar & Kitchen.

With over 15 years representing premium American and European wines throughout the United States, Jeff’s goal is to bring niche artisan wines of the highest caliber to you. A graduate of James Madison University in hotel and restaurant management, Jeff’s career has included restaurants and catering in New York and Rhode Island as well as wine sales and brand representation across the U.S.

Geremie Callaghan worked for several years marketing luxury fragrance and skincare brands in New York City.
